Perfect Summer Meals

“This is the perfect summer meal!”

That is the way several friends have described the casual fare at our recent summer get-togethers. I’ve been serving a couple different salads along side some type of grilled meat or burgers at each of our summer barbeques. Salads are a great way to take in all the wonderful fresh flavours of summer and they help to ensure that you still have room for dessert!

I’m going to share some of my favourite summer salads over the next couple of weeks. As it’s the time of year when we are on the go–exploring cottage country and catching up with friends as much as possible–I’m going to be short and sweet in my posts.

So, getting straight to the point, here’s the salad that I made almost every weekend last year. It’s as flavourful as it is colourful–and if the truth be told, I could eat the entire bowl. I highly recommend this salad. I must warn you though, if you tell people that this is succotash, your guests may start to quote Sylvester the Cat (“Sufferin’ Succotash!”).

Summer Succotash

Adapted from In My Mother’s Kitchen by Trish Magwood

  • Juice of 1 lime
  • 4 ears of corn, cooked
  • 1 sweet red pepper, diced
  • ¼ red onion, diced
  • 1 ½ green onions, thinly sliced
  • 1 ½ cups halved grape tomatoes
  • 1 cup shelled edamame, blanched and cooled
  • ¼ cup olive oil
  • 1 tsp salt
  • 1 avocado, cubed

Directions:

Cut the corn off the cob. Add red pepper, red onion, green onions, tomatoes, edamame, olive oil, salt and lime juice. Stir well. Cover and refrigerate overnight. Add avocado just before serving.

Notes:

  • To prepare the corn, I put the husked corn in a large pot, bring the water to a boil, reduce the heat and boil for five minutes. The original recipe included instructions to mix together the zest of one lime, with a bit of melted butter and cayenne — then brush this on the corn before grilling on the barbeque. I’ve simplified this and I don’t think the salad loses any flavour in the process. You could certainly try this if you have the time.
  • I’ve made this the same day in a pinch. It still tastes great.
  • Buying frozen shelled edamame is a huge time saver. I always use the frozen and I don’t blanch it.

    • I hope you try it Kristy — it’s a good one! I think the corn and edamamer make this kid friendly…now if I could just get the girls to eat tomatoes. If you do make it, let me know how the family likes it.

    Barb, it’s one of the most appetising summer salads I have ever seen. When I saw the first photo I thought “edamame” and I was right! I love edamame and it’s really funny because I plan to post soon a simple dish I made last week with it. I’m looking forward to seeing your next salad recipes.

    • The colours really make this dish! I serve edamame to the kids a lot, so I’ll be watching for your recipe. It’s pretty versatile isn’t it? Sissi, the lime combined with the corn, tomato and edamame is a winning combination.

  9. I’m so with you on the salads in summer idea. I was just thinking that my posts may become boring because from here on, all I may make are veggie dishes and salads…but that’s what you WANT when it’s hot. Now this, my friend, is one lovely looking salad. In fact, I’ve bookmarked it to try later this week when our corn comes in from the CSA, and I just love how you used endamame with this instead of butter beans…what a great way to get those into your diet! And the addition of avocado, I just can’t wait to try this! Bravo!

    • You are right — it definitely is what you want when it’s hot. I’ve been feeling the same way about posting salads Betsy. When I think about my friends (most of whom are moms) who read my blog, they tell me that they make my simple recipes — the taco bake, the muffins, the loafs, the chili etc. So I really believe that some of these simple salads are the things readers will actually make. I’m often torn because our fellow bloggers post such interesting and creative recipes. I guess there needs to be a balance in there somewhere.

      I had to look up succotash, and I see that it is usually made with butter beans. The edamame definitely switch things up nicely. I hope you make this!

    I’m a big fan of summer salads – well, as you saw my most recent post was a salad. I don’t think there can be many things better in the summer – barbecued meat, fish or veg (or halloumi omg!) and some fantastic salads like this one. So rammed with colour… really pops out of the page Barb 🙂

    Perfect dish for this heat wave we are experiencing. Toss in a few chunks of cheese for additional protein, a piece of crusty bread, and there you have it – a no-cook meal. Oh, a glass of wine would be good too.

  17. I’ve often wondered about “Sufferin’ succotash”. It looks far too fresh and delicious to have anything to do with Sylvester. A great salad and definitely one that will grace our BBQs from now on. GG

    • You know I had to look it up to confirm the definition of a succotash — I didn’t know that it was a combination of corn and beans. Swapping in the edamame is a creative twist..and one that I wish I could take credit for. Let me know how you like it if you do make this salad.
